Ingredients 

1 cup milk
1/2 cup sour cream
1/2 cup vegetable oil
4 egg whites
1 teaspoon vanilla extract 
1 box vanilla cake mix

Instructions 

  1. Preheat oven to 350°F and line a cupcake pan with liners.
  2. Mix milk, sour cream, oil, egg whites, and vanilla.
  3. Add cake mix and stir until smooth.
  4. Fill cupcake liners about 2/3 full.
  5. Bake 10–14 minutes until set and lightly golden.
  6. Let cool completely.
  7. Cut a small center out of each cupcake.
  8. Fill with lemon curd
    Frost as desired.

Ingredients 

1 cup graham cracker crumbs
3 tbsp melted butter
2 tbsp sugar

16 oz cream cheese, softened
1/2 cup sugar
2 eggs
1/4 cup sour cream
2 tbsp lemon juice
1 tbsp lemon zest
1 tsp vanilla

Topping (optional)
Whipped cream
Lemon slices
Extra lemon zest

Instruction

  1. Preheat oven to 325°F and line a muffin pan with liners.
  2. Mix graham cracker crumbs, melted butter, and sugar.
  3. Press into the bottom of each liner.
  4. In a bowl, mix cream cheese and sugar until smooth.
  5. Add eggs, sour cream, lemon juice, lemon zest, and vanilla.
  6. Mix until combined.
  7. Pour filling over crusts.
  8. Bake for 18–22 minutes until set.
  9. Let cool, then chill in the fridge.
  10. Top with whipped cream, lemon slices, and zest.

  3. Add oil, eggs, milk, and Peppermint Extract 
  4. Stir until the batter is smooth.
  5. Fill cupcake liners about 2/3 full.
  6. Bake for 18–22 minutes or until a toothpick comes out clean.
  7. Let cool completely before frosting or adding toppings.

1 cup water

1 cup honey

1 cup fresh mint leaves

                                                               

Instructions 

  1. Add water and honey to a small saucepan over medium heat.
  1. Stir until the honey is fully dissolved.
  1. Add fresh mint leaves and let it gently simmer for a few minutes.
  1. Remove from heat and let the mint steep as it cools.
  1. Strain out the mint leaves.
  1. Pour into a jar or container and store in the fridge.

Ingredients 

1 lb smoked sausage or kielbasa, sliced
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, sliced
3–4 potatoes, diced
4 cups chicken broth
1 cup heavy cream
Salt and pepper
28 ounce crushed tomatoes

Instructions 

  1. Heat olive oil in a pot over medium heat.

This Pineapple Mint Spritzer is a bright, refreshing drink perfect for spring gatherings or a cozy seasonal treat. The fresh mint and pineapple create a light tropical flavor that feels festive for St. Patrick’s Day or any warm afternoon.

Ingredients 

2 ounces honey Mint simple syrup 

8 ounces pineapple juice

Ginger Ale soda (to your liking)

Ice

Fresh mint leaves

Lime slices for garnish

*Optional drop of green food coloring for St. Patrick's Day color. 

Instructions

1. Fill a serving glass with ice.

2. Stir in honey mint simple syrup and pineapple juice.

3. Top with Ginger Ale or sparkling water.

4. Add fresh mint leaves and garnish with a lime slice and mint sprig.

Optional: add Rum, Coconut Rum or Vodka for the adult version.
